Baingan ka Bharta

Baingan bharta is a South Asian dish prepared by grilled eggplant and mixing it with tomato, onion, herbs and spices. Grilling the eggplant over charcoal or direct fire infuses the dish with a smoky flavor.

  • 2 medium Eggplants
  • Oil
  • 2 Large Onion
  • 1 Large Tomato
  • 2-3 Green Chilies
  • 4 cloves garlic
  • 1 tsp ginger garlic paste
  • ½ tsp Salt
  • 1 tsp Red Chili
  • ¼ tsp Turmeric Powder


  • Make incisions in raw eggplant
  • Stuff garlic cloves in it
  • Brush some oil
  • Put Eggplant directly on stove to cook
  • Keep rotating, when the skin starts to crumble and it is soft inside
  • Remove it from direct heat and put it on a plate
  • Remove the head and peel the skin (Ahem …… Nope I am not watching too many zombie shows)
  • Mash it with Wooden Spatula
  • In a pan add oil
  • Cook onion until golden brown add ginger garlic paste
  • Add salt, red chili and turmeric
  • Cook well
  • Add tomatoes and cook until oil separates
  • Now add smoked and mashed eggplant
  • Mix and cook for 5-7 minutes
  • Garnish with fresh cilantro
