Ingredients
  

Puri

  • 2 Cups Flour
  • 1/2 Cup Water
  • 2 tbsp yogurt
  • 1 tsp Salt
  • Oil

Chanay

  • 2 Cups Chanay
  • 1/2 cup Oil
  • 2 Onion
  • 4 tomatoes
  • 3 green chilies
  • 1 tbsp ginger garlic paste
  • 1/2 cup yogurt
  • 2 medium potatoes
  • 1 tbsp Crushed red chili flakes
  • 1 tsp 1 tea spoon
  • 1 tsp turmeric
  • 1/2 tsp red chili powder
  • 1 tsp chicken powder
  • 1/2 tsp garam masala
  • 1 tsp Amchur powder
  • 1/2 tsp hamaliyan salt
  • 1 tsp Cumin seeds
  • 1 tsp chaat masala

Achari Aloo

  • Your favorite Achar Masala with its oil
  • 4 medium boiled potatoes

Sooji Ka Halwa

  • 1/2 Cup Sooji
  • 1/2 cup Sugar 1/2
  • 1/2 Cup Water
  • 4 tbsp Oil
  • 5 Cardamom
  • Handful raisins and nuts

Meethay Chawal

  • 250 grams Rice
  • 5 tbsp Sugar
  • 8 Ounce Orange Juice
  • Orange Zest
  • 5 Cardamom
  • Raisins and nuts
  • 1 tsp Yellow food color
  • 1 tbsp Oil

Chana Daal

  • 250 grams Gram Lentils
  • 1 Medium Onion
  • 1 tomato
  • 4 tbsp oil
  • 1 tbsp ginger garlic paste
  • 1 tsp green chili paste
  • i tsp salt
  • 1/2 tsp red chili powder
  • 1 tsp green chili powder
  • 1 tsp cumin powder
  • 1 tbsp coriander powder
  • 1/4 tsp turmeric
  • water

Instructions
 

Puri

  • ·       In a bowl, add ¼ cup of water, 2 tbsp yogurt, 1tsp Salt and 2 cups of flour
    ·       Start Kneading
    ·       Knead into small balls, Use Oil to grease your hands
    ·       Wrap it in cling film and let it rest for ½ and hour
    ·       Now roll the dough into thin puri
    ·       The oil should be EXTREMELY hot
    ·       Fry the puris
    ·       Serve With Chanay, Halwa and Aloo

Chanay

  • ·       Blend onion, tomatoes green chilies and ginger garlic paste
    ·       You can boil the ingredients for 10 minutes and then make a paste as well
    ·       Add oil in a wok and then add the paste
    ·       Cook until the oil separates
    ·       Add all the spices and mix well
    ·       Add the boiled, mashed Potatoes
    ·       Cook well
    ·       Add Chanay (Chickpeas)
    ·       Now add yogurt Mix well
    ·       Let it cook for 15-20 Minutes

Achari Aloo

  • ·       Add achar masala with its oil in a pan. We took Aam ka achar masala (Mango Pickle)
    ·       Add Potatoes and toss it, mix it and serve it.

Sooji Halwa

  • ·       Take ½ cup Sooji (Semolina)
    ·       Cook it in pan on very low heat for 5-7 minutes and set aside
    ·       Take 1 ½ cups of water add ½ cup sugar in it and let it simmer add cardamom seeds
    ·       In a pan take oil and toast Nuts and raisins
    ·       Add Sugary Water
    ·       Mix well and add Sooji (Semolina)
    ·       Mix it until well combined
    ·       Cook for 1-2 minutes

Meethay Chawal

  • 1.      Par boil rice add a pinch of food color in water
    2.      In another pan add oil and roast cardamom seeds
    3.      Add sugar, orange juice and orange zest
    4.      Let it turn into syrup
    5.      Add raisins
    6.      Cook for about 5 minutes
    7.      Add boiled rice
    8.      Dry the water
    9.      Lower the flame and cover rice with paper and put the lid on for 5-10 minutes

Chana Daal

  • 1.      Add oil in a pot
    2.      Then add onion and cook until golden brown
    3.      Add tomato and cook until tender
    4.      Add a little bit of water
    5.      Add all the spices and some water to make a pastelike consistency
    6.      Add lentils
    7.      Cook for about 5 minutes
    8.      Then add 2 glass of water and cook for half anhour to 45 minutes
    9.      Fry small onion and add when daal is well done
    10.  Serve with rice, naan or chapati
