Baked Potato Casserole

Ingredients
1.5 lbs Russet Potatoes
½ Cup Monterey Jack and Cheese
½ Cup Cheddar Cheese
Salt and Pepper
½ Cup Sour Cream
4 Spring Onion
Instructions
Boil potatoes for 10-15 minutes
Put in refrigerator for 3 hours
Shred them
Add Shredded Cheddar and Monterey Jack Cheese
Season with salt and pepper
Add spring onion
Mix with very light hands
Add sour cream
Mix lightly
We don’t want mushy potatoes
We want a bite that says we baked these potatoes and just put sour cream and spring onion on it.
Bake until its golden brown from top
Serve warm
