Beef Stew
Ingredients
- ¼ Cup Oil
- 1 Liter Stock
- 2.5 lbs Beef
- 1 Bay Leaf
- 1 Cup Flour
- 3 tbsp Tomato Paste
- 1 Cup Peas
- 2 Carrots
- 3 Celery Stalks
- 1 Onion
- 3 Potatoes
- 1 tsp Salt
- 2 tsp Black Pepper
Instructions
- Take flour in a bowl add Salt and pepper in it and mix well
- Sprinkle seasoned flour on beef chunks and coat well
- In a Dutch oven or a pan with heavy bottom take oil
- Sear beef in it from all sides
- Take the beef out
- The crust on the bottom is called fond. It’s the good stuff it will help build the flavors
- Add onion in the same pan and cook for 10 minutes on low heat.
- Add tomato paste and cook until the raw taste is gone.
- Add 1 tbsp of that seasoned flour if nothing left add 1 tbsp flour and some salt and pepper if need be.
- Cook until flour is well combined
- Deglaze the pan with a little bit of stock
- Cook for 5-7 minutes
- Return the beef to the pan
- Mix well and cook for 10 minutes
- Add stock, cover and cook for 1 hour on low to medium heat
- When meat is tender add all vegetables minus peas
- Add bay leaf
- Cook for 20 minutes
- Add peas and cook for 10 minutes
- Remove bay leaf
- Beef stew should be ready
- Mix well and serve warm
