Mix Vegetables
Ingredients
- 2 tbsp Oil
- 1 Large Onion
- 1 Green Chili
- 4 Turnips
- 1 Small Broccoli Crown
- 5-7 Cauliflower Florets
- 1 Carrot
- Fresh Cilantro
- 1 Cup Tomato Puree
- 2-3 tbsp Shan Vegetable Masala
- 1 tbsp Brown Sugar
- 2 tbsp Lemon juice
- 1 ½ Cup Water
Instructions
- Cut and wash the Vegetables
- In a pan add oil
- Add finely chopped onion and slit in halves green chili
- Cook until it softens
- Add vegetables
- Mix well
- Add Sugar if you are using large turnips, it reduces its bitterness and enhances the flavor
- Mix well and add vegetables masala
- Mix and cook for 5 minutes
- Add tomato puree and cook for another 10 minutes.
- Add water cover and cook for 15 minutes
- Check the vegetables if they are not tender enough cook for some more time
- Add lemon juice and cilantro
- Close the lid and keep the vegetables on low flame for 5 minutes
- Should be ready to serve with white rice or pratha
