  • 2 tbsp Olive Oil
  • 1 Large Onion
  • 3 Red Sweet Pepper
  • 1 Large ripe Tomato
  • 2 Diced Tomato Cans
  • 1 tsp Salt
  • ½ tsp Garlic Powder
  • ½ tsp Cumin
  • 1 tsp Black Pepper
  • ½ tsp Paprika
  • 1 tsp Crushed Red Pepper
  • 3 Eggs
  • ½ Cup Shredded Mozzarella


  • In a pan add olive oil
  • Dice onion and saute in olive oil
  • Add red sweet pepper or bell pepper
  • Add ripe tomatoes or canned tomatoes
  • Add all the spices
  • Cover and let it simmer for 15-20 minutes
  • When tomato sauce looks well combined add eggs in it
  • Bake until egg whites set
  • You can add mozzarella or feta cheese
  • Garnish will some fresh cilantro.
  • Serve with bread of choice
