  • 2 tbsp Oil
  • 2 tbsp Butter
  • 1 Small Onion
  • 2 Celery Sticks
  • 2.5 lbs tomatoes
  • 5-6 Cloves Garlic
  • 8 Cups Chicken or Vegetable Stock
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • ½ tsp Cayenne
  • ½ tsp Paprika
  • Sugar if the soup is too sour
  • Tomato Paste if you want to get more tomato-y taste


  1. Roughly cut vegetables
  2. Pour oil in a pan
  3. Add celery and onion
  4. Add sea salt
  5. Sauté for 5-7 minutes
  6. Add garlic cook 1-2 minutes (do not brown)
  7. Add chicken stock and tomatoes
  8. Let it simmer when it starts to reduce add black pepper, cayenne and paprika
  9. Blend the whole mixture
  10. Give it a taste
  11. Adjust seasoning according to your likeness
  12. If it is very sour add sugar
  13. If your tomatoes were not red enough and you want red color in soup, add some tomato paste
  14. To get homogeneous texture run it through a mesh strainer
  15. Use a spatula to get most of the soup out only left with fiber
  16. Transfer it back to pan
  17. Add butter and let it simmer until it reaches your required consistency
  18. Drizzle sour cream and basil on top
  19. Serve with grilled cheese sandwich
